Damian’s Apple Galette Recipe

These galettes are delicious on their own or served with Vanilla Bean ice cream and salted caramel.

Ingredients  – Makes approx. 12
• 6 small granny smith apples
• 100g unsalted butter (melted)
• 120g castor sugar
• Icing sugar (for dredging)

Ingredients for the pastry
• 300g plain flour
• 170g unsalted butter (cold & diced)
• 150ml ice cold water
• 20g castor sugar
• Pinch of salt

Ingredients for the Salted Caramel Sauce
• 50g castor sugar
• 50g brown sugar
• 50g golden syrup
• 75g unsalted butter
• 125ml pouring cream


Rough Puff Pastry…
• Place your flour, sugar, salt & butter into your food processor
• Pulse until butter and flour start to incorporate
This pastry relies on little flecks of butter throughout so don’t over mix
• Slowly add cold water and continue to pulse until the pastry just comes together.
• Remove pastry onto a bench, pat it into a flat rectangular shape & wrap in cling film
• Refrigerate for a minimum of 1 hour

Caramel Sauce…
• Place both sugars, golden syrup and butter in a pan on medium heat
• Allow all the ingredients to dissolve and come together
• Cook for 2-3 minutes and then turn up the heat
• Pour in the cream and cook for 1 minute
• Add salt

Damian’s Tips: The longer you cook this sauce the stiffer it will become. Allow sauce to cool before tasting

• Heat oven to 220*C
• Roll out your pastry into an even rectangle to fit the size of your baking sheet
• Prick the pastry all over with a fork
• Set aside

• Peel & Core your apples and then slice thinly into circles
• Arrange these slices over the pastry, slightly overlapping
• Leave a thin border of pastry around the edges
• Sprinkle with castor sugar and drizzle with melted butter
• Place in the middle of your oven and cook for 15-18 minutes (or until pastry is golden and apples are cooked)
• Remove from the oven and place on a cooling rack
• Dredge with icing sugar while still hot

How to serve…
You can cut into squares or rectangles once cool or you can place under a grill to caramelise the sugar and warm through but be sure not to burn the pastry. The galettes are delicious on their own or served with Vanilla Bean ice cream and salted caramel.
