Piper St Food Company came about simply because Damian loves making charcuterie. Damian’s obsession for creating beautiful parfait and terrines was, however, getting a bit expensive and we decided he could only justify making all this lovely food as long as he sold some.
So here we are, now with a beautiful purpose built kitchen in Central Victoria’s food heartland Piper Street Kyneton, where we have access to some of the best free range meat, poultry, eggs and award winning organic garlic & herbs. When you’re as obsessed with not just flavour but layers of flavour as Damian is, the quality of every ingredient counts.
We are determined that every single ingredient that goes into these products has it’s own story to tell and we don’t want these compromised by any chemicals or mass production techniques.
Each product is lovingly hand made and recipes and products will change with each season. We don’t want our terrines looking the same batch after batch but we do want them to taste amazing.
Making terrines, rillettes and parfaits is a time consuming past time especially when made to time honoured classic French traditions and recipes. Most people don’t have the time to make these products as often as they might like. It takes us days of preparation and marinating to develop the flavours and it can be arduous hand cutting, dicing, mincing to get the exact texture that we’re looking for. For us it’s a pleasure spending a few days before the ovens go on just getting everything perfect to create this beautiful food.
The vision for Piper St Food Company is to make food that begs to be shared. Damian has always made terrines for family gatherings, like a day at the races or casual family lunches and continues a three-generation tradition of giving jars of rich creamy pâté as Christmas presents.
We want to continue these traditions and create food that can be packed for sunny picnics, create an elegant light supper or impress the socks off your friends as the perfect pre dinner snack. It’s food that brings people together and you should feel really good for sharing it.
