A good stock can create the most wonderful soups, braises, stews and risottos. A simple chicken stock is so easy to make and freezes well - it is well worth making a big pot of stock and freezing some down.
A home made stock allows you much more creativity and flexibilty than shop bought products. Commercial stocks are often very sweet and over seasoned which means there's no room to add your own seasoning without affecting the balance
