Roasted Carrot & Lentil Salad

Here's another wonderful version of this versatile carrot and lentil salad

This time using French green lentils, hazelnuts & medlar vinegar

It is a satisfying salad on it's own, but is also particularly delicious served with our roasted duck galantine - and it's always a good idea to make way too much and hope there's left-overs

Once you've made this salad you could try your own variations by using walnuts and oregano or mint and almonds - you can try different dressings too or add other grains or roast vegetables - beetroots work well, so does pumpkin
